Ingredients
- 2 cups corn (canned or frozen)
- 15 ounces black beans (drained and rinsed)
- 8 ounces cherry tomatoes (halved)
- 1/2 cup red onion (diced)
- 1/2 cup cilantro (chopped (or basil))
- 2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 2 garlic cloves (minced)
- salt & pepper (to taste)

Instructions
- Gently mix the corn, beans, sliced tomatoes, and red onions in a large bowl.
- In a small bowl, whisk together the basil (or cilantro), vinegar, oil, garlic and salt and pepper.
- Pour the dressing over the salad mixture and gently blend it together. Garnish with fresh cilantro (or basil) leaves and enjoy!
