Sweet Potato Souffle

sweet potatoes

Tbsp
coconut oil
divided

pure vanilla extract

cinnamon

cup
almond milk
1/4
cup
maple syrup
2
eggs
3/4
cup
pecans
chopped

sugar
Instructions
Bake sweet potatoes at 400 for 45 minutes and then peel.
Combine the sweet potatoes, 1 Tbsp coconut oil, vanilla, cinnamon, milk, maple syrup and eggs in a medium bowl.
Mix (with hand mixer) until everything is combined well and smooth. Pour into a baking dish that has been sprayed with non-stick spray.
Combine pecans, 1 Tbsp coconut oil and sugar in a small bowl and sprinkle on top of sweet potato mixture. Bake for 30 minutes at 350 degrees.
